Empire Biscuits

Bake these sweet, jammy biscuits as a perfect accompaniment for your cup of tea or to share with friends.

Using the Dualit Hand Mixer, follow the recipe below created by blogger Brit Woodruff, to bake your very own vegan, fruity biscuit.

Method
  1. Put the flour, butter and a third of the icing sugar in a bowl and bring together using your hands.
  2. Mix in the sugar, vanilla and no egg replacer yolks.

  3. Place the mixture onto the work top and knead until a dough has formed.

  4. Place the dough in the fridge and chill for 30 mins.

  5. Preheat the oven to 180°C and line a baking tray with baking paper.

  6. Dust your worktop with flour and roll out the dough.

  7. Cut 20 biscuits from the dough with a round biscuit cutter.

  8. Transfer to the prepared baking tray, and bake for 10-12 mins or until lightly golden brown around the edges.

  9. Leave to cool completely.

  10. Mix the remaining icing sugar with 2-3 tsp of water to make a very thick icing.

  11. Use a spoon to drizzle the icing sugar over the top of 10 biscuits then top each with one a glacé cherry, then leave to set.

  12. Spread the jam over the remaining 10 and sandwich together with the iced halves.
