Christmas Cake Tray Bake

With dried fruit, mixed spice and a hint of brandy in the background, this traditional Christmas Cake is great if you're having a smaller gathering this Christmas. We use a square baking tin to make this more of a tray bake and cut into squares or fingers to serve. Try our Rum and Citrus Soaked Fruit recipe to prepare your ingredients. Made with the Dualit Hand Mixer with flat beater attachment.

Method
  1. Preheat the oven to 170°C.
  2. Place the butter and sugar into a large bowl and whisk with flat beaters until combined.
  3. In a separate bowl, whisk the eggs.
  4. Gradually add the eggs into the mixture, whisking until combined.
  5. Gradually add in the flour to mixture, mix until well combined.
  6. Add in the mixed spice and treacle and whisk, then add the sultanas and cherries and mix to combine.
  7. Take the apple and grate it into the mixture, giving one final mix.
  8. Line a baking tin with greaseproof paper and pour the batter in, spreading evenly.
  9. Bake in the oven for 1 hour.
  10. Remove from the tin and allow to cool completely.
  11. Brush the cake with some of the honey.
  12. Overlay a sheet of marzipan over the cake and trim the edges to neaten.
  13. Brush the marzipan with more honey.
  14. Overlay a sheet of fondant icing over the marzipan.
  15. Trim the edges to neaten and patch any uncovered areas.
  16. Dust with icing sugar to set the fondant icing.
  17. Cut into squares or fingers and add festive decorations.
  18. Add a final dusting of icing sugar to serve.
