- Using the Dualit Hand Blender, blend half a punnet of strawberries with the caster sugar to create a strawberry coulis, and set aside. Add the sugar one spoon at a time and taste as some strawberries will be sweeter than others.
- Using the Dualit Hand Mixer with the balloon whisk attachment, mix the icing sugar into the cream cheese.
- Spread the cream cheese mix evenly over the base of the flan case, bringing the mix up to the sides.
- Halve the remaining strawberries and arrange flat side down on the flan base until completely covered.
- Pour the coulis over the flan ensuring all strawberries are covered.
- Place in the fridge to chill.
- Dust with icing sugar before serving with a dollop of fresh clotted cream and a sprig of fresh mint leaves. Enjoy!
