Natoora's Trombetta Courgette with Paprika Mayonnaise

Natoora Founder & CEO Franco Fubini has created this  Trombetta Courgette, Mayonnaise and Paprika recipe specially using the Dualit Hand Mixer.

Natoora's Trombetta Courgette with Paprika Mayonnaise

Preparation Time: 10 minutes

Cooking Time: 10 minutes

Serves: 1 Courgette per person

Ingredients:

Courgette

  • Romana or Grezzina Courgettes (one per person)
  • 25g salted butter (we use Estate Dairy)
  • 1 tsp fresh marjoram or oregano 
  • 1 tsp fish sauce (optional) or verjus (optional) — otherwise a good wine vinegar
  • Pinch of smoked paprika

Mayonnaise

  • 50ml extra virgin olive oil
  • 200ml rapeseed oil
  • 2 egg yolks
  • 2 tsp fresh lemon juice
  • ½ tsp flakey salt

Method:

  1. First, make the mayonnaise using the Dualit Hand Mixer. Make sure your egg yolks and oils are at room temperature then, in a wide bottomed bowl, very slowly pour the oils over the yolks, blending continuously until you have a smooth sauce.
  2. Add lemon juice and salt, blend again then adjust the seasoning if needed. You want it to have a nice lemon kick and a spoonable consistency.
  3. In a shallow pan on medium high heat, melt the butter, add a good pinch of salt and the marjoram. Once the butter has stopped foaming add the whole courgettes. Cook for a minute then add a small cup of water and cover with a lid before lowering the heat to low. After five minutes remove the lid. There should be enough liquid in the pan but if it is drying up add a little splash of water.
  4. Add a little more butter, raise the heat to high, then add a small cup of verjus, or a few drops of fish sauce or vinegar. Baste the courgettes to finish them off and reduce the sauce. Cooking time does not need to be super precise — it depends if you want them to be a little more al dente or completely cooked through.
  5. To serve, trim the top and bottom of the courgettes. It is nice to leave most of the top on — the part that was attached to the plant.
  6. Slice in half lengthways, arrange on a plate, spoon over some of the reduced buttery sauce and serve with a nice dollop of mayo on the side.
  7. Finish with the zest of an unwaxed lemon, a little smoked paprika.
